Here’s one of my most favourite finger food recipes for your New Years party. Whether you’re hosting your own, or attending someone else’s bash, these treats will help you ring in 2010 sweet style!
Fleur de Sel Toffee with Chocolate
Makes about 2 pounds
coconut oil cooking spray
1 pound (4 sticks) unsalted butter
2 2/3 cups organic white sugar
1/3 cup water
1/4 cup light corn syrup
8-12 ounces of your favourite chocolate, chopped
Fleur de sel, for sprinkling on top
Directions
- Coat a rimmed baking sheet with cooking spray. Bring butter, sugar, water, and corn syrup to a boil in a large saucepan, whisking frequently until sugar dissolves and butter melts. Cook, undisturbed, until mixture registers 300 degrees on a candy thermometer, about 12 minutes.
- Whisk toffee mixture, then immediately pour onto prepared sheet, tilting pan to spread over entire surface. Let stand until cool and slightly hard (do not move the pan for first 30 minutes.) In the meantime, melt chocolate over a double boiler. Spread melted chocolate over completely cooled toffee. Once chocolate has cooled but not hardened fully, sprinkle with fleur de sel over surface. Let cool completely. Break toffee into pieces. Toffee will keep, covered, for up to 1 week (…mine never lasts that long though!)
